Grilled Chicken Breast with Quinoa and Roasted Vegetables

Ingredients:

2 boneless, skinless chicken breasts
1 cup quinoa
2 cups water or chicken broth
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:

Preheat grill to medium-high heat.
Rinse and pat dry the chicken breasts. Season both sides with salt and pepper.
Grill chicken breasts for 5-6 minutes per side or until cooked through.
While the chicken is grilling, cook the quinoa according to package instructions. Substitute water with chicken broth for added flavor.
Preheat oven to 425°F.
In a bowl, toss sliced red and yellow bell peppers and red onion with olive oil, salt, and pepper.
